Coconut Date Bites

 

The real problem with me is that I am hungry all the time so I am always looking for some healthy office snacks to survive during the day. This time I went to our local market and I couldn’t resist buying some fresh medjool dates, and after eating some of them I realize that making some energy date bites will be just perfect.

The dates contain no sugar and to be honest this natural sweet snack is just perfect and no-baking required as well. So, let’s start cooking this vegan, gluten-free, paleo recipe!

Ingredients
  • 8 Medjool dates
  • 1/2 cup gluten-free oats
  • 2 tbsp chocolate chips
  • 1/2 tsp vanilla extract
  • 2 tbsp coconut flakes (unsweetened)
  • 1/2 cup seeds (sunflower, cranberries, nuts, almonds)
Servings: bites
Instructions
  1. Put the dates in a food processor until smooth.
  2. Set date paste aside.
  3. Combine oatmeal, chocolate chips and seeds in a medium sized bowl.
  4. Add the vanilla extract to the date paste
  5. Stir to combine all the ingredients
  6. Refrigerate for about 15 minutes, it's easier to work with.
  7. With a spoon scoop make tablespoon-size balls.
  8. Refrigerate balls in an air tight container and enjoy!
